Cheesy Mushroom & Tomato Crustless Quiche

Hello Dolls,


As shown in my 7am Housewife Morning Routine, I love to prepare quiche for breakfast throughout the week. It makes for a quick breakfast for me & my husband for about 2 days. That helps me by shortening my morning routine.


You can add in your favorite breakfast produce & meats like spinach, tomatoes, mushrooms, broccoli, asparagus, onions, bacon, sliced ham, sliced turkey, breakfast sausage or chicken. All that & the KITCHEN SINK! (or whatever you have in the fridge!)



NOTABLE TIPS to creating a water-free quiche:

Sometimes if you bake quiche, it has a tendency to come out a bit watery. Its not the end all to this breakfast bake, but it's not the best end result.


A watery quiche is due to moisture in the ingredients. In order to keep a water-free quiche, be sure to dry your ingredients before adding them together in the pan.


In this recipe I used tomatoes & mushrooms, two ingredients that can be quite watery. Tomatoes, of course, has pulp and seeds. Salt draws out moisture from mushroom which turns into this beautiful mushroom sauce. Lovely for a pasta dish, but not so much for a quiche.

As I shown in the Housewife Morning Routine, I seasoned the mushrooms with salt, garlic & thyme then baked it by itself. Baking the mushrooms alone helps dry up any moisture that would be released due to the salt.

I also dried the tomatoes with a napkin to draw out the moisture. You can do the same for any other produce like for your spinach or broccoli.


Be sure to pat dry or bake it first before cutting, mixing or prepping your other ingredients to save time.


Here's my recipe for the Perfect Quiche!

5 eggs, large

1/2 cup of milk

1/2 tomato on vine, diced

4 mushrooms, sliced

1/2 cup of grated Medium Cheddar Cheese (or cheese of your choice)

2 teaspoons of minced garlic

2 sprigs of fresh thyme

Salt, to taste

Pepper, to taste


You can bake quiche or cook in a skillet on the stove.

The steps remain in the same order.


Preheat oven to 350 degrees.

  1. Add sliced mushrooms into a buttered pie or baking dish. Add minced garlic, sprinkle thyme leaves and lightly salt.

  2. Bake for 5 minutes.

  3. While mushrooms are baking, crack 5 eggs in a bowl & whisk. Then add in milk & whisk together.

  4. Dice 1/2 of the tomato, then pat dry to rid tomatoes of pulp. Then lightly salt.

  5. Remove the baking dish from oven. Stir the baked mushrooms.

  6. Add in the diced tomato and egg mixture.

  7. Add salt & pepper to taste. Then sprinkle shredded cheese on top.

  8. Bake in oven for 15-20 minutes. Quiche top should be a light golden brown.

et Voila!


The perfect quiche. Slice & serve with toast, yogurt parfait or a bowl of fruit.
