Dairy-Free Egg-Free Banana Chocolate Chip Muffins

Hello Dolls,


I've fallen in love with this new recipe while trying to compile a  collection of tasty dessert recipes that are also healthier side.


It was a little impromptu when I made this recipe for the first time. This occurred on a day when my refrigerator's stock of groceries was a little low, but I couldn't resist the impulse to bake in the morning. I searched the internet for an egg substitute after realizing I was out of eggs and discovered that chia seeds would work. I was glad to use chia seeds because they have so many benefits.


In March, I prepared this dish repeatedly before sharing it in my Housewife Diary vlog. Bake this recipe with me in the vlog HERE.



Let's Begin!



1 3/4 cups All-purpose Flour

1 teaspoon Baking Powder

1/2 teaspoon Baking Soda

1 1/2 teaspoons Ground Cinnamon

1/2 teaspoon Ground Nutmeg

1/2 teaspoon Salt

2 tablespoons chia seeds + 5 tablespoons of water (substitute for 2 eggs)

1 1/2 overripe banana

1/3 cup olive oil or avocado oil

1/2 cup pure maple syrup

1 1/2 teaspoons vanilla extract

3/4 cup dairy free chocolate chips



directions

  1. Preheat the oven to 375ºF. Line or butter your muffin pan and set aside.

  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg and salt.

  3. In a measuring cup or small bowl, add 2 tablespoons of chia seeds and 5 tablespoons of water. Lightly whisk, then let the mixture sit for 5 minutes. You'll notice the mixture thickens into a gel-like liquid.

  4. In a medium bowl, combine the chia seed mixture with the mashed banana, oil, maple syrup and vanilla extract. Whisk until fully combined.

  5. Add the medium bowl mixture to the large bowl with the flour mixture. Mix until just combined. Then gently fold in the chocolate chips.

  6. Distribute the batter evenly into the muffin tins. Then sprinkle the tops with extra chocolate chips

  7. Bake for about 15 to 20 minutes, or until a toothpick or cake tester inserted into the middle comes out clean (a few moist crumbs attached is fine!).

  8. Let cool for about 5 minutes.
